Lactic acid bacteria, Pediococcus, and diastatic wild yeast can silently compromise batch after batch. LAB produce off-flavors, acidity, and haze that cannot be reversed. Diastatic S. cerevisiae is worse: it looks identical to normal brewing yeast, hides on standard plates, and can lurk in your process for weeks before causing over-attenuated beer, gushing cans, and safety hazards. Once it surfaces, tracking it down is notoriously difficult.

Most breweries know these risks but few test consistently. Plating takes up to two weeks. Third-party send-outs cost $99+ per sample with multi-day turnaround. At those prices and timelines, routine testing is out of reach for most operations.

What SENTRI tests for.

The SENTRI Spoilage Panel screens for the organisms and genetic markers that matter most to brewers, organized into three detection categories.

Not every lactic acid bacterium found in your beer is a spoilage threat. Many species cannot survive in the presence of hop-derived antimicrobial compounds and will die off before causing damage.The HorA, HorC, and HitA genes encode membrane transporters that pump iso-alpha acids out of the bacterial cell, allowing the organism to grow in finished beer.

SENTRI screens for all three of these genetic markers. A positive result means the LAB in your sample can survive hop exposure and poses a real risk to your product. A negative result means the organism is unlikely to persist in packaged beer.

Diastatic S. cerevisiae carries the STA1 gene, which encodes a glucoamylase enzyme that breaks down dextrins your brewing yeast cannot. It looks identical to normal brewing yeast under a microscope, grows indistinguishably on standard plates, and can hide at low levels for weeks before problems emerge in package.

SENTRI detects the STA1 gene directly, validated against an inclusivity panel of 19 confirmed diastatic strains. Molecular detection is the only reliable method for identifying this organism before it causes over-attenuation, gushing, or package safety issues.
